You need to identify how much traffic each search term gets.
Second you need to consider whether or not you can get ranked decently under the high traffic terms.
Look at the sites listed under the big terms and check their incoming links and PageRank. PR is really wacky right now but it is somewhere to start.
Target the five search terms that you think you can get ranked under and start building links to your site with the specific word strings in the link text.
I took a look at your site and your web guy does not know search engine basics. You main keywords in your meta tag are not even in your title tag. That is the most inportant place for keywords.

Your keywords aren't a loss John. They become the fuel and fodder to provide greater depth to your site and added potential weight for the site. It is important that the Search Engines find pages, articles and content beyond the index page.
Too often inexperienced marketers and web designers attempt to point everything at the index or "homepage" of their site. It is much more important to direct links throughout the site. Ideally, you would want a separate unique page or article built around a single keyword and that page would be within one click of the index or homepage of the site.
You then should rely upon a SEO Friendly Site Map like you can create using a free tool like GSiteCrawler. Use GSiteCrawler to create a Google, Yahoo and MSN friendly Site Map and then place the location of your new site map into your webmaster tools area of Google and allow Google to find it. Assuming you have other appropriate pages, such as: Terms,Disclaimers Copyright, etc. you should find your site spidered and indexed in short order!
